I saw someone say this earlier, and, well, it made me feel slightly disappointed. Is three weapons the limitation of the unit system, or can they actually potentially carry and use more? I feel that this kinda limits gameplay if our options for deck variety get bigger eventually.

Few such systems exist though.

If there wasn't such a limitation it'd be really fun to see the modders make some kind of IFV with just 10 machine guns on it with tons of ammo.

The Blackhawk can equip ludicrous amounts of equipment, I believe, with the addition wing pylons.

I think it's more a "balance" problem : There is no coaxial MG in the game, and sometimes independant MGs aren't here (for example the tank destroyers using optional AA MGs, or the first versions of the Marder IFV, even if there is enough slots).
There can be many reasons :
-the 5 points increment cost system, because a coaxial MMG is not very useful (can't be used against helos, have the same range as RPGs, can't be fired at a different target). That's the reason why the Skot 2A is the only vehicle with a KPVT and a coaxial PKT, even if the BRDM 2 and the BTR use the same turret.
-Locking weapons in a group composed of many units with 3 or more MGs each is... not relaxing
-It's outside the scope of the game (like firing ports, it would add much confusion to the game for little or nothing in term of effectiveness).

The lack of MGs makes AML 60 sad

The Air Force are the only guys to make use of the ESSS in any real numbers. It's usually used for extra fuel, though the Black Hawk can carry 16 hellfire missiles on them, plus reloads internally. This is a very uncommon use, though, and I'm not even sure the ESSS was in use by 1985.

Aside from Hellfires, can't they also mount gun pods, and other items like the Hydra pod? Sure, it's not used much, but with the M134's, it's pretty well armed to the teeth. It was just an example for thought regarding the system considering how many damn weapons it can carry.
